The bran is separated largely un-ground and therefore coarser. The coarser bran it provides is digestively more beneficial and interferes less with dough rise. The extracted less ground germ is kept separate and quickly sealed in an oxygen free air tight enclosure preserving vitamins and flavor. The separated components are combined in a single sales package with its internal components proportion for easy restoration of a complete wholewheat baking ingredient.
